Sweet Potato Quinoa Chili
2 medium sweet potatoes, peeled and diced
½ cup Quinoa
1 lbs. Turkey Burger, browned
1 large onion, diced
4 cloves garlic, minced
2 tablespoons chili powder
4 teaspoon ground cumin
2 teaspoons paprika
1 cup water
1 ½ cups low-sodium chicken broth
2 15 ounce cans black beans, rinsed
1 14 ounce can diced tomatoes
½ cup chopped fresh cilantro
Lime wedge for garnish
- Brown turkey burger together with onion and garlic.
- Add all ingredients to stove top pot or crockpot. Bring to boil. Reduce heat and simmer until potatoes are soft.
- Top with lime wedge and cilantro
