- 1 1/2 cups crushed bran flakes
- 1 cup buttermilk
- 1/3 cup canola oil
- 1 egg
- 1/3 cup brown sugar
- 1/2 teaspoon vanilla
- 1 cup whole wheat flour
- 1 teaspoon each baking powder and baking soda
- 1/2 teaspoon salt
- ¼ c chia seed
Soak crushed bran flakes in buttermilk, set aside. Beat together oil, egg, sugar and vanilla. Add to buttermilk/bran mixture and mix well.
Mix flour, baking soda, baking powder and salt. Spoon into muffin tins.
Bake for 16-18 minutes.
